Sippin’ on coke and rum, I’m like so what I’m drunk. It’s the freaking weekend baby I’m about to have me some fun.
ingredients
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp nutmeg
2 tsp cinnamon
1/2 cup brown sugar
1 cup canned pumpkin
2 eggs
2 tbsp milk
1/4 cup unsalted butter, room temp
1 tsp vanilla extract
glaze
1/2 cup icing sugar
2 tsp milk
1/2 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 375 degrees. Sift flour, baking powder, salt, soda, nutmeg and cinnamon in a small bowl. Set aside. Cream together the brown sugar, pumpkin, eggs, milk, butter and vanilla, until butter is well incorperated. Slowly add dry ingredients until just barely combined, do not overmix. Spray pan with cooking spray and half fill with batter. Bake for 12-15 minutes, or until a toothpick comes out clean.
Glaze: mix until smooth and creamy, should pour easily from a spoon. You may need to add milk or powdered sugar for right consistancy.
